No Egg Tiramisu

Ingredients:
3/4 heavy cream
8 oz Mascarpone cheese,room temperature
2 tsp vanilla extract
1-1/2 rum extract +1/2 tsp for espresso mixture
1/2c sugar+ 4 tbsp for the cream
20-30 lady fingers(Savoiardi)
1 cup warm water
2 tsp espresso powder

Directions:
1.Whip heavy cream and 4 tbsp sugar.
2.Mix Mascarpone with rum extract and vanila.Whisk together until soft peak.
3.Fold Mascarpone mixture w/ most of the sweetened cream.
4.In a medium bowl,combine espresso powder,1/2 cup sugar and warm water.
5.Dip Lady fingers for 3-5 seconds in espresso mixture and line in a 8"x8"x2" square pan.Cut the lady finger to fit.
6.Add portion of Mascarpone cream mixture and level out.
Repeat layer 2 more times for 3 layer cake.
You can sprinkle cocoa powder between layers if you like.
Refrigerate for few hours or overnight.
Yield 9 serving.
